Greek Chicken



This delicious chicken is a true crowd pleaser!

Ingredients:
  • 1 whole chicken, cut up into 8 pieces (or tray of chicken legs), skin on
  • juice of 2 lemons
  • 1/2 cup olive oil
  • 1.5 Tbsp chopped fresh oregano, or 1 tsp dried
  • 1.5 Tbsp chopped fresh thyme, or 1 tsp dried
  • 1.5 Tbsp chopped fresh rosemary, or 1 tsp dried
  • 5 cloves of garlic, crushed
  • 1/4 tsp pepper
  • 1/2 tsp paprika
  • 1 tsp sea salt (or to taste)

Directions:
  • Put a few deep gashes diagonally into the chicken.
  • Mix all the above ingredients and put into a large ziploc bag or container. Add chicken and mix.
  • Allow to marinate overnight or for at least 8 hours.
  • When ready to bake, preheat oven to 450 degrees.
  • Lay chicken and marinade on a baking dish, making sure the chicken is not too crowded.
  • Bake for 45 minutes, then remove from oven.
  • Finish cooking chicken on a charcoal or gas grill for 10 minutes, (5 minutes per side), making sure not to burn.
  • Serve over rice or roasted potatoes.

  1. yup! definitely going to try this out as soon as i can get my hands on some whole chicken :) WOuld it work as well on cubed breast meat? Thinking this might a good meal for the baby too.

  3. Javi, it would probably work, but you should probably skip the baking part and just grill it, so it won't dry out. I think it would taste better with legs or the whole chicken, though. :-)

  4. awesome! thanks guys :) Unfortunately we're in an apt. with no grill, BUT i'm thinking putting all the marinade in greek yogurt and then rubbing that all over the chicken might help.

    Gonna try it tonight and let you know how it goes :)

  5. hey guys, just wanted to give you an update. We used greek yogurt (2%) 3 tablespoons for 3 chicken breasts sliced into little strips (almost like a shwarmah), put your entire mix into the yogurt and onto the chicken. Marinaded and then baked the entire thing for about an hour and half at 375 (turning the pieces now and then). And it was AMAZING! oh i also threw in some cubed onions to help give it a warm roasted taste.
